Bread Tasting “Una cata con mucha miga” at El Corte Inglés A Coruña

El Corte Inglés A Coruña is hosting a bread tasting “con mucha miga”. The event will take place on Thursday, 15 October at 19:00 hours. Participants will discover the nuances, aromas, textures and flavours of artisan bread guided by Miguel Beade Nogueira, master baker at Panadería Mercedes (Carral) and one of the most prominent figures in Spain’s baking sector.
During the tasting, attendees will sample a selection of creations that reflect both Galician baking tradition and the innovation and creativity that define Beade’s work. Curry bread with raisins and walnuts, chocolate and walnut bread, olive and walnut bread, French brioche, and two versions of traditional Galician bread — one made with sourdough and another with yeast — will allow participants to appreciate the differences between both fermentation processes.
The baker will also share his vision of the craft, the secrets of artisan production and the importance of working with quality raw materials and proper fermentation times to achieve breads with their own personality.

The event comes at a particularly significant moment for Miguel Beade, who has just received in Bilbao his third star in the 50 Panaderos Top de España 2026 awards, considered one of the most prestigious recognitions in the field of artisan baking. A fifth‑generation baker, Beade had already received this distinction in 2022 and 2024, consolidating his position as one of the leading national references in the sector.
His connection to baking dates back to the early 20th century, when his ancestors made bread in the communal ovens of Carral. That family tradition evolved into Panadería Mercedes, founded in 1945 and today renowned for the quality of its products and its commitment to slow fermentation and artisan processes.
Currently, Miguel Beade’s creations are featured in some of Galicia’s most notable gastronomic establishments, and are also sold at the Club del Gourmet of El Corte Inglés A Coruña.
With this activity, El Corte Inglés reaffirms its commitment to promoting local producers and spreading Galician gastronomic culture, offering experiences that bring the work and knowledge of some of the region’s finest artisans closer to the public.
